I wanted to keep it simple this week with two of our family’s favorite Chicken and rice recipes. They use similar ingredients but, oddly enough, taste different. If you were to poll my kids, they’re pretty split as to their favorite.
🥗🍽️Add a side salad and warm biscuits to either of these meals, and dinner is served.
Chicken & Rice — Crockpot Version
This recipe comes together in just a few minutes. I use my rice cooker and program it to finish cooking the rice right at the same time as the crockpot is done, which makes dinner easy.
Ingredients:
2 lbs chicken breast
2 cans cream of chicken soup
1 packet ranch seasoning
rice — however much your family eats. We make 4 cups for our family.
Instructions:
Place chicken breast in the crockpot. Top with the soups and seasoning packet.
Turn the crockpot on low for 6 hours.
Remove the chicken and shred it with a hand mixer. Then, add it back to the crockpot, stir it, and serve over rice.

Chicken & Rice — Casserole Version
This recipe is currently in my oven and making my house smell amazing. I threw it together while my fiance was home for lunch, but it’s also great to make the night before. It takes 3 hours to cook, so I love this one for busy sports nights. I throw it in at 4, feed the kids a snack, head to soccer, and come home at 7 to dinner ready to go.
Ingredients:
1.5-2 lbs chicken breast, cubed
2 cans cream of chicken soup
1 can cream of mushroom soup
1 can cream of celery soup
2 Tbsp butter
1.5 cups rice
Instructions:
Pour melted butter into the bottom of a 9x13 pan.
Place 4 cans of soup and rice in the pan and mix.
Add cubed chicken and stir.
Cover and cook at 250 for 3 hours
