If you’ve been following me on Instagram then you know I’ve been talking a lot about using themes to plan dinner. It’s how I’m making dinner simple in June because all the school festivities are making life feel extra chaotic.
Let me tell you, it made planning simple AND cooking simple. Partly because I chose simple meals with simple sides but still.
SIMPLE.
So, I figured I’d throw all of last weeks meals together in a post and send you the recipes. Because if I need simple, I’m assuming you need simple too. And even if you don’t like all the recipes I share — tweak them, swap them out, do whatever makes dinner simple for you and your family. So here goes.

Monday: Mexican 🌮

Sat & Sun: Leftovers, takeout or last minute plans

And now … the recipes.
Recipes for Week 1
Monday: Mexican — Creamy Chicken Enchiladas
I shredded the chicken ahead of time which made the dinner prep so much quicker the night of. We served this with corn, watermelon that I had cut over the weekend and tortilla chips.
Tuesday: Breakfast for Dinner — French Toast
I always forget that Breakfast for Dinner isn’t as simple as it sounds in my family because there’s 9 of us! I had to make 18 pieces of french toast. 😆🤷 I also made scrambled eggs, sausage, fresh fruit and cinnamon rolls for dessert.
Wednesday: Pasta — Cheesy Tortellini
Another meal you can literally throw together in 15 minutes which is perfect for those busy soccer nights. I served it with a side salad and Italian bread. Pasta is always better with bread, isn’t it?
Thursday: Sandwiches — Chicken Philly Cheesesteak
This meal was definitely the favorite of the week. It’s a crockpot meal because I try to make at least one a week to give myself a little break in the evenings. My family loved it so much that I forgot to take a picture of the finished product. We ate fresh fruit (can you tell my kids love fruit?!) and chips with this meal.
Friday: Pizza — Bubble Pizza
If you need a meal that your kids can help you make, this is it. My two year old loves to help rip the biscuits and sprinkle cheese. This is a great pizza themed meal for Friday night movie night but doesn’t cost takeout prices. We always pair this one with fresh veggies and/or fruit, all which were prepped and cut over the weekend so I just have to pull stuff out of the fridge for an easy side.
I hope this helps make life easier for you! If you’re new to meal planning, I wouldn’t suggest trying all these new recipes in one week. That’s a lot and won’t feel easy at all. 🫣
Pick one or two new meals, pair them with your own family favorites and enjoy a week where 5 pm doesn’t make you panic.
