I’m back for another week of meal prep, and I’ve got some super delicious recipes, perfect for summer. Many of you follow me on Instagram and requested these recipes when I posted what I made, so here they are! 👇
But first — my weekly meal prep goals:
prep fruit and veggies for the week
make breakfast for the kids

Sunday is the day I do most of my meal prep so that the food lasts till Thursday or Friday.

Blueberry Banana Bread
My son ate a piece of this on Monday morning and made it a point to tell me how delicious it was. Then my fiancé went and ate two pieces in what seemed like seconds. 😮 I’d say this bread was definitely a win.
Energy Bites
I’ve posted this recipe before and I’m sure I’ll post it again. It’s one of our favorite snacks to whip up because it’s filling, healthy, and perfect to grab-and-go on the way to soccer practice.
Also, it takes just minutes to make a batch, which is my favorite part. ✨
You can customize these if you’d like, adding in mini chocolate chips, coconut, dried cranberries, almonds or a little bit of everything!
M&M Blonde Brownies
Another dessert in a pan, my favorite type.
These were so soft and chewy, my kids were asking for seconds before the first piece was even finished. I said “No!” of course, because I didn’t want to have to bake a second dessert on Wednesday.
We ate these for dessert after dinner, but they’d be great to pack in a lunchbox too.
And again, it only takes 10-15 minutes to have them made and in the oven. You could grab this recipe and be eating these by dinner tonight.
Lunch for Mom
Unstuffed Pepper Bowl
With 35g of protein, these bowls are filling and perfect for lunches.
And no, you won’t get tired of them! One recipe makes 5 servings, and I was still loving it on day five.
I promise you, these don’t disappoint, and you need them in your life. Because moms deserve healthy, good-tasting food too.
