This week has been a whirlwind of Halloween and soccer games, and I can barely keep up! It’s weeks like this when I’m so thankful for meal planning — I know, I know! You’re tired of hearing about it, but for real … it has changed the way I do life.
I used to miss out on everything because I was figuring out what was for dinner, buying ingredients, and cooking at the last minute … and that also made me an angry, stressed-out, yelling mom. Now I get to attend basically everything (not everything because five kids in sports, hello!😲), I’m not stressed about what we’re eating, and I’m a much more pleasant person when we sit down to eat ON TIME!
That’s the purpose of this newsletter. To show you, dinner doesn’t have to be chaotic, neither does breakfast or lunch, and with just a little time on the weekend, you can get control of feeding your family.
My tip for this week: Prep two dinners today.
Find two recipes or use two family favorites, make an ingredient list, head to the store, and get those dinners made before you head to bed. Then, when you’ve got a busy day, pop that dinner in the oven or crockpot and watch the stress melt away. 🫠
Now … onto the recipe.
Pumpkin Chocolate Chip Bars
Ingredients:
2 cups flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter softened
1 cup sugar
1 egg
2 teaspoons vanilla
1 cup canned pumpkin puree
1-1/2 cups chocolate chips
Instructions:
Preheat oven to 325. Generously grease a 9x13 pan.
Add flour, pumpkin pie spice, baking soda, and salt in a small bowl. Stir until well combined.
In a separate bowl, cream butter and sugar until light and fluffy. Add egg and vanilla to the mixture. Mix well. Then beat in pumpkin.
Add the dry mixture to the wet (mix well), then fold in chocolate chips and spread the batter evenly into the pan.
Bake for 30 minutes or until edges begin to pull away from the pan and the center is set (the toothpick inserted in the center is clean).
Cool completely before cutting.
